Philosophy
Troglodyte, meaning “cave dweller”, is a humorous title claimed by our production crew, who spend much of their time working in the wine caves. Troglodyte wines are based on the idea that blends can be more interesting than the sum of their parts. Winemaker Sean O’Keefe took inspiration from the white wines of Northeastern Italy, utilizing varieties grown on Old Mission Peninsula to create a truly good house-wine that is both complex in its simplicity and versatile with food pairings.

Flavor Notes
Pinot Grigio forms the base of this wine, balancing crisp green apple flavors against the softness of lees aging in a 1200L Stück. Bright Sauvignon Blanc shines on the nose with citrus forward notes of ruby red grapefruit, while herbaceous Grüner Veltliner provides supporting structure. Not trying for showy aromatics, we instead created a balanced, intentional Northern Michigan blend.

Pairings
We suggest pairing with Mediterranean pasta salad, raw oysters, gazpacho, or seafood paella. For a summer appetizer, try puff pastry topped with goat cheese, asparagus, & lemon zest.

Vinification
The Sauvignon Blanc was our first pick of the season, harvested relatively early on September 30th, 2022 to capture citrus notes and vibrant acidity. Pinot Grigio followed on October 10th accompanied by Gruner Veltliner on the 14th. All three varieties started fermentation in stainless tanks, with the Sauvignon Blanc and Gruner Veltliner finishing in oak Stucks. All aging wine underwent malolactic fermentation over the winter and remained on their lees to form our mid-palate complexity house-style. The wines were racked and blended into a tank on April 3rd, 2023, filtered on April 22nd, and bottled on June 7th.

Cellaring
A great vintage to enjoy now through 2028.
