25% refosco, 20% cabernet franc, 15% pinot noir, 15% riesling, 15% pinot grigio, 7% sauvignon blanc, 3% gewürztraminer

Flavor Notes
The 2022 Troglodyte Rosato is an easy going blend with refreshing flavors of watermelon and early season strawberries, balanced by subtle hints of vanilla from barrel aging. A saignée blend of Refosco, Cabernet Franc, and Pinot Noir provide the core of the wine with Pinot Grigio adding mid-palate weight. Small portions of Riesling and Sauvignon Blanc were blended in for quenching acidity and fruitiness. While only making up 3% of the blend, aromatic Gewürztraminer comes through on the nose with light floral notes. Soft textures lead into a lingering, flavorful finish.

Philosophy
Winemaker Sean O’Keefe believes in balance through blending. This philosophy is a driving force behind the Troglodyte wines—the individual varieties forgo the spotlight in favor of a seamless blending of textures and flavors. The Troglodyte Rosato is based around saignée with a vintage specific selection of fruit to provide the best flavor representative of the season. Troglodyte, meaning “cave dweller”, is a humorous title claimed by our production crew, who spend much of their time working in the wine caves.

Pairings
Our Rosato is a classic wine to be enjoyed alone or with food. Think fresh fruit, cheese, fun filled social occasions, or something off of the grill.

Vinification
The Troglodyte Rosato is based around saignée—a winemaking technique that is primarily used in red winemaking to concentrate fermenting grape flavor by removing juice. The term saignée is French and comes from the verb 'to bleed'. 2022 was an unseasonably cool fall, and Winemaker Sean O'Keefe used a greater amount of saignée from Refosco, Pinot Noir, and Cabernet Franc in this vintage in order to build structure. This is the first year Refosco takes the stage as the largest blending partner in the wine, which provides a uniquely refreshing acidity.  Additional press Riesling featuring higher ph and tannin from our usual style was kept aside and added to the blend for acid structure, and skin-contact Pinot Grigio was added for mid-palate weight and complexity. Lastly, a small portion of our 2022 Totus Porcus blend was added to give the wine a final spark of personality. The saignée was collected in stainless drums and combined with the barrel aged white wines June 2023. Bottling occurred shortly after, just in time for the summer sunshine.

Cellaring
Enjoy now through 2025 and look for subtle changes over time.
