2016 Simplicissimus

Food Pairings: This will pair well with briny oysters and other seafood. Flavors like ginger, lemongrass, or spices in Thai food will also pair nicely. What makes this wine special is its ability to be appreciated by itself, as German's are known to do with sekt (sparkling wine) parties.

Vinification: Riesling is a late season riperner that develops sugar slowly and holds onto its fresh acidity much longer than typical grapes used for sparkling wine. We were able to pick this relatively late in the season when we determined the flavors were ideal for a sparkling wine base. It was whole cluster pressed to minimize any bitter phenolic extraction from the grape skins, and inoculated with the non-traditional yeast Torulaspora Delbrueckii. In order to retain a sufficient sugar for the secondary (bubbly) fermentation, we rapidly cooled down the young wine at the tail end of fermentation, leaving it untouched on its lees until the following May with no sulfur additions. It was then lightly filtered, bottled, and cellared in our winery caves for a year while it slowly refermented in the bottle. We began disgorging the finished sparkling wine in June of 2018 with no added dosage. 

Story: Contrary to its name, the winemaking technique used for Simplicissimus is anything but simple. This unique style lay between Pétillant-Naturel and Méthode Champenoise, with strategic techniques pulled from each. Our Simplicissimus experienced a very hands off approach; no sulfur or sugar was added to the base wine, The later harvest time allowed our sparkling wine to naturally ferment to a brut nature requiring no dosage. The methodology of creating white wine gave way to its amusing name; a difficult journey to create a simply heedless wine. 

Cellaring recommendations: This wine is perfect to enjoy now but can sit up to 6 years.
