Philosophy: Our style continues to evolve at Mari as we seek the right balance of oak fermentation and aging to deliver a wine that both truly tastes of our region while also incorporating some of the Burgundian traditions that have made Chardonnay beloved around the world .

Vinification: The grapes were pressed whole cluster directly into an assortment of one to five year old French oak barriques for fermenting. Towards the end of fermentation we stirred the lees roughly once a week for two months while malolactic fermentation occurred. Afterwards, the wine was left to sit on its lees until shortly before bottling. We lightly filtered it and then bottled.

Still very much in its youth, we recommend allowing our 2018 Chardonnay some time in the bottle before enjoying. This vintage will begin to mellow into maturity over the course of 2020 and will be best enjoyed between 2022-23, potentially to 2026.

Tasting Notes
A light creamy vanilla nose from time spent in oak. This wine opens with regionally characteristic zippy acid and harkens to a leaner chablis style which then transitions to a softer fuller mid palate with notes of walnuts, butter, and vanilla. Still very young, the layers of flavor are yet unfolding in this Chardonnay and continue our trend of embedding neutral oak notes amongst soft fruit.
Food Pairing Notes
The balanced nature of this wine allows it to pair well with a variety of dishes, including heavier ones it has the body to match, like an herbed roasted chicken. Late summer and root vegetables like corn, red pepper, and butternut squash compliment well; we recommend a pumpkin or portobello ravioli. For dessert, go with lemon bars.
