Flavor Notes: All purposeful, this Sauvignon Blanc leans into intense flavor with tart grapefruit and mint. Bright acid settles into a long lees influenced finish from time in the barrel with a small amount of Chardonnay.
This food friendly wine is the perfect foil for any seafood, especially oysters. The bright grapefruit will also compliment dishes with ginger, coconut, or basil. Try with a rice noodle salad, sushi, or a roasted salmon with slaw.
2019 was an unseasonably cool year, resulting in a struggle to ripen grapes before the first snow. Sauvignon Blanc is an early ripener, yet even so we harvested the grapes on October 20th—the latest we’ve ever picked Sauvignon Blanc. The juice was fermented in stainless steel and transferred towards the end of fermentation on January 7th 2020 to a 2400L Doppelstück, where it was blended with a small amount of Chardonnay. The wine aged on its gross lees for just over seven months until August 27th. After one light filtering, the wine was bottled on September 3rd 2020.
This wine is young, fresh, and vibrant. We expect it to taste best through 2025.
