Flavor Notes: This Riesling is an excitingly unapologetic “true dry”, meaning it has both high acid and low sugar. The acid is ripe and clear with notes of lemon zest, ripe apple, and peach.


Both a great dry riesling and a great dry wine, NYC sommelier Paul Grieco describes it lovingly as “Riesling with teeth!”.

John Haeger (Riesling Rediscovered) notes: “Green apple, citrus and floral notes with an herbal underlay; tight, tense minerality; very dry on the finish.  Lovely wine already; likely to open a bit more with additional time in bottle”.


Suggested Pairings: Head for freshwater fish, mussels, shrimp, seafood, sushi. A great choice to cut through heavier or buttery dishes.



  • Fermentation: Brought to a true dry level in an individual tank

  • Aging: Lees contact for six months in stainless prior to bottling


Cellaring Recommendations: This wine will be great for aging, but the flavor will change over time. We recommend enjoying now, or ageing for 8-12 years. If you're feeling adventurous (and patient), try waiting until 2036 to open!


Special Notes: This was Winemaker Sean O'Keefe's favorite of the 2016 vintage! He regards it as a top three career Riesling, so make sure to give it a try.
