2016 Merlot

Vintage: 2016

Varietals: 94% Merlot and 6% Refosco

Vineyard: 100% Grishaw 


Flavor Notes:  Toasty and chocolatey notes of oak pair well with the dark berry and cherry fruit. The small addition of Refosco (6%) adds acidity and zip to the blend, giving our Merlot a soft but very present tannic structure and an approachable feel.


Suggested Pairings: Our Merlot pairs well with a steak, but one could also steer it in an Italian direction. Think meat-based sauces, rosemary, thyme, fennel sausage, red pizzas, spinach and garlic sauteed with olive oil/balsamic vinegar, etc.



  • Fermentation: fermented in both red wine fermenters and in stainless open-top bins for three weeks on the skin

  • Aging: after pressing, the free run juice was transferred to 600L demi-muid barrels with a heavier toast for 10 months

  • Blending: the merlot was racked into a stainless steel tank and blended with 6% refosco before settling and maturing for another 10 months as a blend

  • Filtering: one very light filtration

Cellaring Recommendations: A great ageing wine, the Merlot can be enjoyed now through 2028

Of my Private Selection this is one of my favorite wines out of everything I have and lately it's not that I have a lot of others this is the one I choose again and again I will be ordering another 12
