Philosophy: A wine that is not flamboyantly fruity or floral in style, yet has a captivating presence and structure. The Pinot Bianco’s true beauty is the tangible core of the wine: the subtle interplay of lees and skin contact, acidity, minerality, and structure. Ours is different from other local Pinot Bianco’s — we’ve made a wine that’s not shooting for easy likes.

Vinification: The Pinot Bianco was picked at the end of October 2017 and pressed whole cluster. Fermented in stainless steel, the Pinot Bianco was then blended with skin fermented Tocai Friulano and Pinot Grigio and allowed to rest on the lees for 50 days. Our special stamp on this wine is a cue from winemakers in Friuli — added texture and flavor from Tocai Friulano (native to the Friuli region). The Tocai Friulano has just the right tannin and phenolics to give this wine a rounded texture and mouthfeel, while the Pinot  Grigio adds mid-palate weight.

Tasting Notes
The Pinot Bianco grape is a more floral and delicate member of the Pinot family, and Winemaker Sean O’Keefe added a strategic small amount of Tocai Friulano that had been sitting on its skins for 40 days. The addition enhanced firmness, phenolics, and backbone; making an almost tea-like, pomegranate tincture.

Pair this wine with a pasta primavera featuring your favorite vegetables, like broccolini, bell peppers, and zucchini. Also try with a savory mushroom risotto; the weight of this wine holds up against heavier dishes.
