Flavor Notes
The interplay of light, fruity Gamay and Pinot Noir colors the Rosato with flavorful depth while Riesling adds characteristic acid and tartness. A Pinot Grigio saignée builds body and mid palate texture with rounded hints of oak from barrel aging in a German Doppelstück for an extra year. This is a fun, fruity, and quenching wine perfect for a hot summer day, reminiscent of strawberries and watermelon Jolly Ranchers.

Philosophy
Troglodyte, a term meaning cave dweller, was a name chosen by owner Marty Lagina, appropriate for how our winemaking team dwells in the Mari wine caves. The Troglodyte line features wines sourced from our various vineyards with an intent on balanced blending. Our Rosato is considered a hybridization between the two rosé techniques—either basing the wine around one varietal or blending red and white together. As a mutation of Pinot Noir, the Pinot Gris plays off of the two red grapes well, harmonizing the blend with a note of brightness from the additional Riesling.

Pairings
Our Rosato is a classic wine to be enjoyed alone or with food. Think fresh fruit, cheese, fun filled social occasions, or something off of the grill.

Vinification
Winemaker Sean O’Keefe planned on Gamay Noir as the base for the Rosato, harvesting from our Bella Vista Vineyard when the fruit was ready. The Gamay and Pinot Noir were aged in a variety of neutral oak vessels. The Grigio was fermented traditionally, but then aged in a 2500L Döppelstück for one year—similar to how our amber wine, Bestiary Ramato, is created. Sean then experimented with blending in the Pinot Grigio saignée, Riesling, Pinot Noir, and Gewurztraminer until the perfect balance was achieved. Bottling occurred on May 13th, 2021.
