Flavor Notes:  Ramato is Italian for "copper", and that's what one should expect with the Bestiary Ramato! 100% Pinot Grigio grapes left to ferment on the skins, this wine was made in an old world style (as far back as 5,000 years in Caucacus!) we've decided to help bring back. Think of it as a reverse rosé: white grapes pretending to be a red wine, rather than the traditional red grape pretending to be a white wine.


The nose on this wine is complex, with cloves, a hint of leather, and tart cherries. You’ll taste pomegranate, ripe apples, tea, and plums, with a slight astringency on the finish. Those who enjoy the bitter notes of hops in IPA's or sour beers will find similar joy in the Bestiary Ramato, due to the skin-produced tannins.


Pairings: Think Middle Eastern food, spicy dishes, or funky flavors: curry, Moroccan cuisine, fermented kimchi, Korean beef tacos, brussel sprouts with black pepper and salt, etc.



  • Fermentation: These grapes were destemmed and put into a large red wine fermenter, undergoing malolactic fermentation on the skin. We did pumpovers once a day for 35 days until Winemaker Sean O'Keefe felt the color and flavor were right.

  • Aging: The juice was pressed from the remaining skins and aged for 5 months in a 2400L oak doppelstück, allowing some O2 transfer for softening and maturation.

  • Finishing: The wine then settled and cleared in a stainless tank. It was finished with the lightest filtration possible to preserve natural tannins, flavor, and color.

Cellaring Recommendations: The tannins in the wine will help this age for a while. Treat it like a light red wine and drink now through 2022. Due to the fun and experimental nature of this wine, we are not sure how aging will affect the flavor...yet!
