Flavor Notes
Juicy grapefruit and herbal tarragon, mint, and chamomile notes lead to a delicate mid palate complexity. Bright acid carries through from start to finish, layered with a lees influenced texture.
Philosophy
In a world full of Sauvignon Blanc, Mari’s example is neither a “New Zealand” nor a “Loire Valley”, but our own unique Northern Michigan expression. We strive for a crisp, acid-driven wine rounded and balanced by extended lees aging in a variety of vessels.
Pairings
This food friendly wine is the perfect foil for any seafood. Also try pairing with fruit salads, sushi, or roasted salmon with slaw.
Vinification
The first half was harvested on October 2nd and the second on October 9th from Grishaw Vineyard. Primary fermentation began separately for both harvests in stainless steel tanks. On October 16th, as fermentation slowed, we transferred the first half of the wine to a Stück, two cigar barrels, and a stainless drum. On the 28th the second half was racked from one tank to another. Fermentation ended in December with minimal sulfur additions, and malolactic fermentation was discouraged. The first half aged on its gross lees until bottling, providing textural quality. The two halves were blended April 19th, 2024 and stayed in the tank to settle and age until bottling on July 24th.
Suggested Cellaring
We expect this vintage to taste best through 2028 with subtle changes over time.
