Vineyard: A blend of different vineyards. Mostly Grishaw, with some Jamieson and Irish. Grishaw’s heavier soil lends a softer and fruitier flavor to this wine.
Flavor Notes: Our Scriptorium is a lovely example of an off-dry (or halb-troken if you're German!) riesling that balances fruit and acid. You'll taste notes of grapes, grapefruit, and a little peach. This is a crowd pleaser wine — not too sweet, not too dry; a great choice for a glass on a patio.
John Haeger (author of Riesling Rediscovered) tasting notes: “A full-flavored cocktail of
citrus, melon, peach pit and apple; bright and lively across the palate; lightly grippy on the finish; good acid and just 12°. Very slightly off-dry, delicious and food friendly. Feels Alsatian, but with less alcohol. Worked very well with ponzu roasted chicken”.
Suggested Pairings: Riesling is a great friend of barbeque! Sweet and tangy sauces over pork dishes are great option: think pork ribs, pulled pork sandwiches, and chicken teriyaki.
Processing: The Scriptorium was fermented in several different stainless steel tanks with light lees contact. The Grishaw Vineyard grapes were kept together as a batch, and their tank retained some sugar to help nudge this into off-dry territory.
Cellaring Recommendations: The ideal drinking range is now through 2022, but look for his wine to evolve; around 2024 it may present dryer.
