2016 Trogolodyte Bianco

Vintage: 2016

Varietals: 60% Pinot Bianco (Pinot Blanc), 25% Grüner Veltliner, 15% Sauvignon Blanc
Vineyard: Pinot Bianco from Neeson, Sauvignon Blanc and Grüner Veltliner from Grishaw
Awards: Double Gold at the 2018 Michigan Wine Competition

Flavor Notes: We made this wine as a nod to the dry white wine blends of the Italian Friuli region. Troglodyte Bianco is not an aromatic showboat, instead focusing more on finesse and structure. This is a great wine for anyone who enjoys Sauvignon Blanc or Pinot Grigio, but wants more complexity. Winemaker Sean O'Keefe describes this as a “three person thumb wrestle” with the Pinot Bianco carrying the wine's fruity character; the Grüner Veltliner adding spicy peppery herbal qualities; and the Sauvignon Blanc tying everything together with its texture and hints of exotic fruits.

Food Pairings: This will compliment a wide range of foods, particularly seafood and shellfish. Troglodyte Bianco is not a wine that demands your complete attention, so it may be paired with food or enjoyed by itself!

Processing: The three varietals were fermented separately, with the Pinot Bianco and Grüner Veltliner in stainless steel tanks and the Sauvignon Blanc in Oak Stücks. As soon as fermentation was complete, we combined the wines and allowed them to age on their lees for eight months before bottling.  

Cellaring Recommendations: Lees, oak, and maturation have gotten this wine to a perfect place for drinking, Enjoy now or within the next three years.
