2017 Trogolodyte Bianco

45% Pinot Grigio, 30% Sauvignon Blanc, 25% Grüner Veltliner

Philosophy: Troglodyte wines, particularly the Bianco, are based on the idea that blends can be more interesting than the sum of their parts. Winemaker Sean O’Keefe took inspiration from the white wines of Northeastern Italy, utilizing varieties grown on Old Mission Peninsula. The goal was not to make a showy aromatic wine, but to instead create a well balanced, interesting blend —suitable for any occasion.

Evolution from 2016: Pinot Grigio replaced the Pinot Bianco used in our 2016 vintage, preserving the original style while utilizing our abundant Pinot Grigio grapes as we shifted the 2017 Pinot Bianco grapes to a varietal wine. The noticeable lack of oak in comparison to 2016, combined with an increased percentage of Sauvignon Blanc, results in a crisper, fruitier style.

Vinification: The Pinot Grigio was picked on October 5th, 2017 from our Bella Vista Vineyard. A portion of the grapes were fermented traditionally, while the rest underwent fermentation on the skin. We bled off some of the clearer skin contact juice saignée style, adding this juice to the regular Grigio to build body and complexity while intensifying the remaining skin contact juice for our Bestiary Ramato.

The blended Grigio was then aged in a 1200L Stück. Sauvignon Blanc was picked October 3rd from our Grishaw Vineyard for its crisp acid structure. The juice was then fermented traditionally in stainless steel drums, preserving its bright fruity character—the focal point of this blend. The Grüner Veltliner was picked later on October 26th 2017 from Grishaw before undergoing fermentation on its lees in stainless steel drums. All three varieties were fermented and aged separately, with blending occurring shortly before bottling.

Tasting Notes
Pinot Grigio forms the base of this wine, balancing crisp green apple against the softness of lees aging in a 1200L Stück. Rounding things out, a small portion of skin fermented Grigio saignée was strategically blended in—building body and complexity on an otherwise uncomplicated grape. Bright Sauvignon Blanc shines through the most with juicy grapefruit and citrus, while herbaceous Grüner Veltliner provides supporting structure.

Bright Sauvignon Blanc influences this blend, inspiring great pairing options like soft goat cheese, cucumber dill dip, creamy artichoke or broccoli quiches, and shellfish. We recommend pairing with oysters—Troglodyte Bianco’s citrus notes act perfectly as the “sauce”.
