Flavor Notes
Pretty aromas of ruby red grapefruit lead into juicy, ripe citrus on the palate, accompanied by a pleasantly surprising fullness and complexity. Bright acid settles into a long lees influenced finish from time aging in an oak Stück.
Philosophy
In a world full of Sauvignon Blanc, Mari’s example is neither a “New Zealand” nor a “Loire Valley”, but our own unique Northern Michigan expression. The 2020 vintage yielded a small but intense crop, delighting us with a vibrant narrative of the vintage.
Pairings
This food friendly wine is the perfect foil for any seafood, especially oysters. The bright grapefruit will also compliment dishes with ginger, coconut, or basil. Try with a rice noodle salad, sushi, or a roasted salmon with slaw.
Vinification
All five clones were harvested October 12th, 2020 from our Grishaw Vineyard. Primary fermentation began and continued in a stainless steel tank for two weeks. As fermentation slowed, we transferred the wine to a single 1200L German oak Stück where it aged on its gross lees for ten months. The wine was racked and lightly filtered before bottling on September 7th, 2021.
Suggested Cellaring
While this vintage is still young (as of May, 2022) it is already delicious and ready to enjoy. We expect it to taste best through 2026 with subtle changes over time.
