In the tradition of Italian ripasso wines and with the resurgence of the piquette style, we decided to take our most exotic grape and pomace and fermented them with fresh apple juice. True winemaker’s cider, the Drolleries round out the linear qualities of pure sparkling apple cider with depth imparted from pressed grape skins, lending tannin and tartaric acid to create something both unique and complex.
Each set includes 1 bottle each of Drollery Ambra and Drollery Rosso.
Drollery Ambra
85% Northern Spy apples; 15% Malvasia Bianca
Flavors of golden apple and ripe bosc pear meet delicate tropical fruit and subtle layers of star thistle honey. Italian Malvasia Bianca grape skins add tartaric acid not naturally present in apples, enhancing soft yet crisp textures and tannins in the cider. The grape’s aromatics meld into the Northern Spy apple essence, creating embedded flavors held together by structural and tannic layers.
Drollery Rosso
85% Yarlington Mills, Dabinett, Kingston Black apples; 5% Nebbiolo, 5% Teroldego, 5% Refosco
A completely unique blend of co-fermented grape skins and apples, the Drollery Rosso showcases the beauty of our Italian reds. Nebbiolo, Teroldego, and Refosco shine with notes of cherry, licorice, and balsamic against a backdrop of bittersweet ciderapples. Sparkling levity and a slight sweetness is balanced by tannins to create an entirely new style of cider.
